It was founded by Cameron McClure and Richie Russell who between the two of them have many years of local and international experience spanning countless hours of barista work, extensive coffee training, including cupping and sensory analysis of green beans.
We're hooking you up this month with Ubauque, a washed variety, from Colombia. Ubaque is a municipality of Cundinamarca Department located in Oriente province. This province is 50km east of Bogota in the foothills of three hills: the Guayacundo, the fifth and San Pedro. Ubaque’s topography is full of mountains with a very rich biodiversity thanks to a variable climate.
The name of the town comes from a bush of red sap, Ybaquye, which means blood of wood. This area was ruled by the indigenous Chief Ebaque of the Muisca civilization. The coffee comes from UBACAFE, an association of coffee farmers made up of 43 families living in 11 rural districts in the municipality. The association was constituted in 2010 with 50 hectares of technified crops under shade.
We when taste we pick up hints of dark chocolate, caramel, and berries with medium acidity and bold body. Bloody awesome!
